Zucchini spaghetti with tomato & basil sauce

Ingredients


  • 4 small zucchinis, spiralized
  • 15 oz can crushed tomatoes
  • 4 cloves of garlic, pressed or minced
  • 2 tbsp fresh oregano, finely chopped
  • 1/4 cup packed fresh basil, cut into thin ribbons
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp salt, or enough to tastefreshly ground pepper, enough to taste
  • 1 cup all-purpose flour
  • 1 cup white sugar
  • 1 teaspoon baking powder
  • 1 cup milk
  • 2 cups pitted sour cherries
  • 3/4 cup white sugar
  • 1 tablespoon all-purpose flour
  • 2 cups of water

Directions


  1. Spiralize the zucchinis (use a vegetable spirilize slicer) and set aside.
  2. Combine the remaining ingredients in a large bowl and mix well
  3. Toss the sauce with the spaguetti and decorate with basil on top

Portion: 4 servings.
